Snow Day!

The first big snow of the winter arrived today and everyone was home. Jim worked from home, Christine took a vacation day, Matthew did not have school and I stayed home, cooked and shoveled the white stuff.

The day flew by, and that happens when you make blueberry pancakes, cheesecake brownies, corn cranberry bread and Turkey bolognese sauce.

Turkey Bolognese Sauce
I use about 2.5 lbs of ground turkey for this recipe. It is healthy and not fatty. The ingredients follow:
1 medium onion - chopped
1 medium carrot - chopped
1 celery stalk - chopped
3 cups of low fat milk
1.5 cups of wine
1.5 cups of chicken stock
3 large cans of tomatoes either diced or crushed

Heal olive oil (about 3 tablespoons) in a large stock pot, add onion, carrot and celery, cook and soften for about 6 minutes, break up turkey, add and cook until no longer pink (about 15 minutes).
Add milk and cook for about 30 minutes, add wine and stock and cook for another 30 minutes. Add tomatoes and simmer on a very low heat for about 3 hours. I use my immersion blender to break up the tomatoes. This is even better the next day! Enjoy!

Thank you, Life of a Southern Belle!

Well, I am finally going to start working on this blog and I need to thank Life of a Southern Belle for the incentive. Belle hosted a giveaway on her blog and I won a book, The Girl on Legare Street, and it arrived today! I am delighted because I am always looking for something to read! And so, this blog begins. Not sure, what I am going to say but I’m sure I’ll find something to say a couple of times a week. Thanks Belle!!!
